 Chia Pudding with Mango Ice Cream

Ingredients

Chia Pudding:
• ½ cup almond milk
• 2 tbsp chia seeds
• 1 tbsp cacao powder
• Honey and vanilla extract (optional)

Mango Ice Cream:
• 1 cup frozen mango
• 2 tbsp almond milk
• 2 tbsp whey protein (vanilla, ice cream, or your favorite flavor)

Toppings:

• Shredded coconut
• Extra whey protein
• Crushed pistachios

Instructions
1. Prepare the Chia Pudding:
• In a bowl, mix almond milk, chia seeds, and cacao powder.
• Stir well and let it sit for at least 15 minutes (or refrigerate overnight) until it thickens.
2. Make the Mango Ice Cream:
• In a food processor or blender, combine frozen mango, almond milk, and whey protein.
• Blend until smooth and creamy.
3. Assemble:
• In a serving glass or bowl, layer the chia pudding and mango ice cream.
• Top with shredded coconut, extra whey protein, and crushed pistachios.
