Blue Chia Pudding with Chocolate, Pistachios & Blackberries
A creamy, nutritious, and visually stunning chia pudding with the vibrant blue hue of butterfly pea powder!
Ingredients:
✅ 3 tbsp chia seeds
✅ 1 cup unsweetened almond milk
✅ 1/2 tsp butterfly pea powder
✅ 1/2 tsp vanilla extract
✅ 1 tbsp maple syrup or honey (optional)
✅ 1/3 cup Greek yogurt
✅ 2 tbsp dark chocolate (70% or higher), melted
✅ 1 tbsp crushed pistachios
✅ 1/4 cup fresh blackberries
Instructions:
1️⃣ In a jar or bowl, mix the chia seeds, almond milk, butterfly pea powder, vanilla extract, and sweetener (if using). Stir well and let it sit for 5 minutes, then stir again to prevent clumping.
2️⃣ Cover and refrigerate for at least 2 hours or overnight until thickened.
3️⃣ Once set, layer the chia pudding with Greek yogurt in a glass or jar.
4️⃣ Drizzle melted dark chocolate on top.
5️⃣ Garnish with crushed pistachios and fresh blackberries.
