Healthy Mini Quiches
• 4 eggs
• ½ cup (60g) tapioca flour or flour
• ½ cup (50g) shredded cheese (cheddar or mozzarella)
• 4 slices of turkey bacon (or regular bacon), cooked and chopped
• ¼ tsp salt
• ½ tsp oregano
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
2. In a bowl, whisk the eggs, then add tapioca flour, cheese, salt, and oregano. Mix well.
3. Stir in the cooked bacon.
4. Pour the mixture into muffin cups, filling about ¾ of each.
5. Bake for 15-20 minutes or until firm and golden on top.
6. Let them cool slightly before serving.
💡 Tip: Store in an airtight container in the fridge for up to 3 days. Perfect for meal prep!
